To encrypt a bootable volume, boot from the volume and set Filevault from the Security and Privacy Pref Pane, and follow instructions, also takes a while, but you can use while it is processing (as with the other methods). If the data is already on the partition you can encrypt with Finder, by right-clicking the volume icon on the desktop and selecting "Encrypt disk name" from the drop down (takes a long time).
